    First time snack sticks made..

Thanks. They came out good. I vacuum packed a bunch of them and gave them to friends at work and kept a few for my family. Nothing but great reviews. I think I could do something different tho. Next time.

    First time snack sticks made..

It's the Masterbuilt XL propane smokehouse I bought about 3yrs ago. I haven't used it in a long time and was going to give it away but decided I should use it for sausages and snack sticks. It has brought me back to loving it all over again. I brought it and my amazn pellet tube back to life...

    First time snack sticks made..

I like what I do but I always think there's something that can be done better. My wife says I'm crazy. Lol. My kids reap all the benefits. They love anytime I'm smoking or firing up the grill.

    First time snack sticks made..

I haven't been on the forum for awhile but that doesn't mean I haven't been cooking. No sir. I've decided to try my hand at sausage making and somebody put the idea into my head that I was cool enough to make snack sticks. Lol. I used a beef/pork combo with a run of the cabinet spice selection...

    Christmas prime rib

Howdy everyone! Me and the fam decided to nix the turkey on Christmas, being we just had it for T-day...and the girls won't eat ham unlike me, who is a ham fanatic...but I digress. Lol. So off I went to the local grocery store in hope of finding something that I could truly call dinner. And...

    2 Pork Butts next weekend

As far as time you should be fine. If you're worried about not making the dead line do them ahead of time and serve them in a crock or warming pan with some liquid in em. I've done butts 3-4 days in advance for company picnics.

    First WSM smoke w/QView

Very nice. Nice addition with the WSM also. I want to get one but I got too many builds going on. So I ended up picking up a weber performer and love it. Gotta finish up this 200 gallon build so I can Go back to full stick. Lol.

Boneless BEEF short ribs. 1st try.

Chuckles they were ultra tender. And definitely juicy. No foil for me. I hate steamed beef. I want smoke and plenty of it. These are definitely a contender from here on out. If I can find these regularly, they will be my go to for beef ribs.

Boneless BEEF short ribs. 1st try.

Wasn't too worried about temp. I'm sure I was there tho. Pieces like this or pork csr's I don't worry about temp. I can turn em into butter any day of the week. These were just barely able to slice. I reheated today at work and pushed a plastic knife thru them with no problem. As far as the...

Boneless BEEF short ribs. 1st try.

Thanks. I like the ring too. Haha. Thanks bear. They tasted even better. My wife isn't much of a beef fan unless it's a steak. And this according to her is her new steak. Being that it's less expensive. Lol. Lol. Thanks disco. I'm sure with some convincing the missus will get on board. :)

Boneless BEEF short ribs. 1st try.

So I saw another member on here who had done some boneless short ribs. They looked great. I have been searching for these for awhile now here in OKC. Well ladies and gents....I found em! And I had to make them mine! Lol. I did these of course as I do any other beef rib, just a little TEXAS style...
