It's the Masterbuilt XL propane smokehouse I bought about 3yrs ago. I haven't used it in a long time and was going to give it away but decided I should use it for sausages and snack sticks. It has brought me back to loving it all over again. I brought it and my amazn pellet tube back to life...

As far as time you should be fine. If you're worried about not making the dead line do them ahead of time and serve them in a crock or warming pan with some liquid in em. I've done butts 3-4 days in advance for company picnics.

Chuckles they were ultra tender. And definitely juicy. No foil for me. I hate steamed beef. I want smoke and plenty of it. These are definitely a contender from here on out. If I can find these regularly, they will be my go to for beef ribs.

So I saw another member on here who had done some boneless short ribs. They looked great. I have been searching for these for awhile now here in OKC. Well ladies and gents....I found em! And I had to make them mine! Lol. I did these of course as I do any other beef rib, just a little TEXAS style...
