I have a vertical propane smoker and normally start with chips and chunks. I put a couple handfuls of chips in and two chunks on top. The chips don't take as long to get going and then the chunks sustain for a while. That combo has worked well for me so far!

I agree with Jeff. I've got a propane Brinkmann and use chunks and chips. I've found good chips at Lowes, Home Depot, Menards, and some local butcher shops. Typically the wood I find at the butcher shops is the same as the big stores, just a bit more pricey.

yeah probably only will have a grill as a heat source. should an aluminum pan with water in it do ok on the grill? how about pan of water, pan of meat cover with foil? will that work?
