    Chips and Chunks??

    I have a vertical propane smoker and normally start with chips and chunks. I put a couple handfuls of chips in and two chunks on top. The chips don't take as long to get going and then the chunks sustain for a while. That combo has worked well for me so far!

    Chips, Chunks or Pellets?

    I agree with Jeff. I've got a propane Brinkmann and use chunks and chips. I've found good chips at Lowes, Home Depot, Menards, and some local butcher shops. Typically the wood I find at the butcher shops is the same as the big stores, just a bit more pricey. Good luck!

    yeah probably only will have a grill as a heat source. should an aluminum pan with water in it do ok on the grill? how about pan of water, pan of meat cover with foil? will that work?

    1st Pork Butt today

    It turned out really well. I was happy with it. Cringed a little when my wife tried to put a bunch of sauce on the whole thing after I pulled it. Might have to do another one to take to a football tailgate on Saturday.

    1st Pork Butt today

    Tried to post some pics, but they're being held for moderation since I'm new... Pork Butt is out and resting after a little more than 8 hours. Took it out at 200 degrees. Looks good right now. Hopefully those pics go up soon!

    The Brinkmann Smoker Took out the pork butt after a little over 8 hours. It was 200 degrees on the nose. Used Hickory and Cherry woods.
