Pork Transport and Reheat

Discussion in 'Pork' started by steiny8, Sep 28, 2011.

  1. I will be attending a big college football game this weekend and have been asked to smoke a pork butt and bring it up for pulled pork sandwiches. I'm still a newbie. What is the best way for me to reheat the pork since I plan on making it the day before the game? I was thinking of using and aluminum pan with a little liquid in it and just putting that on a grill. Any suggestions from the seasoned vets?

Is there any way you can seal it up and heat it in hot water not boiling water.  If not I would create a bain marie and put the meat in one pan and put another pan under it to heat water. This will help keep it moist. I am assuming that you are planning on heating it on site with no power or heat source.

    Good luck

  3. yeah probably only will have a grill as a heat source. should an aluminum pan with water in it do ok on the grill? how about pan of water, pan of meat cover with foil? will that work?

That should work.  a couple of sticks under the meat foil pan setting in the water foil pan ought to do the trick.  We often just heat PP or brisket up with direct heat in a skillet.  You could also use indirect w/o the water: flame on one side of the grill and the covered foil pan full of meat on the other (basically turns your grill into an oven).  Don't over-complicate it; it would be fantastic cold!
