Chips and Chunks??

Hi Chris! I use propane (GOSM) and before I modified it to use the AMNPS I always used chunks, chips would just burn to fast.

What smoker do you have? I have a master forge double door propane and all I use is chunks. I only put in a couple small chunks at a time all you want it a little thin blue smoke( tbs ). Thick white smoke will produce a bad taste. The chunks I buy I usually chop into smaller chunks with a hatchet. All you need it to smell the smoke. If you can smell it it's working it magic on the meat.

Now i have to ask, what is AMNPS and GOSM?

I also got the smoking book for fathers day, whats better then a family that doesnt mind a good smoked dinner.

If your smoker came from Lowe's, and it's a square vertical smoker, it's probably a Master Forge brand.

AMNPS is the AMAZ-N-PELLET-SMOKER, from A-MAZE-N-PRODUCTS, one of the featured site sponsors (on the right of the page). I have two of his pellet smokers...very innovative designs.

GOSM is the Great Outdoors Smoky Mountain vertical smoker. This product line is now marketed by Landmann, and sold at a variety of outdoor products distributors, both in-store and on-line.

chunks are fine and last a lot longer than chips.  Depending on your smoke time you will probably need to replenish your chunks too-careful not to put too many else they will ignite and give you higher temps.
 
I have a vertical propane smoker and normally start with chips and chunks. I put a couple handfuls of chips in and two chunks on top. The chips don't take as long to get going and then the chunks sustain for a while. That combo has worked well for me so far!
 
I first thought that chunks were out and chips were in using a vertical propane smoker (based on the directions that came with my smoker) after investing in a variety of chunks prior to buying the smoker.

Sooo... I went out and invested in a variety of chips.

Then, I started reading this forum in earnest.

I now center 4 chunks over the center hot spot and place chips around them in the lesser heat zone

on the tray.

It is working out very well.

And no, I don't soak any of the wood for smoking. That might be OK for chips/chunks placed directly on burning coals to slow down their combustion but I don't need that with this propane smoker.

I do the same with chips and a few chunks. I use thr chips to start the smoke and the chunks to sustain. I am getting ready to by an AMNPS. looks like a great product with great reviews. I also have a upright propane smoker
