Pellet wood w/ amazen tray recomendations for cheese

I've liked combined Peach or cherry with half Alder wood. I usually only smoke about 1.5 - 2 hrs, the cool to room temp, then over night in frig. Vac pack for 3-4 weeks usually allows it to mellow nicely.

I may add metal to inside sidewalls. I dont leave un-attended. Just saves adding chips every 15-20, having heavy smoke, then almost nothing, and add more chips.... I also always have fire extinguisher next to grill just in case. The mes was my first smoker that I didnt hand make. So enjoy...

Just made my version for cheap. Scrap wood, and 12x8 metal from heating/cooling section in lowes. Added high temp red silicon in seams. Added legs to the box with vent holes in bottom, and screws to the Amazn tray to raise it inside. Used it for batch of vension jerky today and worked...

Can I freeze smoked Ribs and how long can they last?

I smoke big batches for summer and vacations. I vacuum pack. I usually add some extra juices to the pack as well. I thaw in frig, then reheat wrapped in foil with a little extra juice. I save extra juices in a large old ketchup squeeze bottle. Open cap, microwave, and it's ready to use as...

Everything's good. Smoked two pork butts and some ribs. Still have the temp sensor bypassed, but the sensors and the stainless hightemp connections came in so this weekend have some work to do.

Masterbuilt mes 340g not working at all, with new parts

Ok. So I bypassed the snap temp sensor with a small jumper wire. System started heating up with element a good orange. Heated up to about 230 with temp set at 250. then slowly started going back down again. I had a temp meat sensor dropped down through the chimney to about the first rack that...

Masterbuilt mes 340g not working at all, with new parts

I am wondering if there is a bad spot in the hot wire inside the unit. Unless I rip the back panel off (this version doesnt have the rivets on the bak) I cant tell where the plugs hot wire goes before it reaches the element connection. Any suggestions on a plug n play for the 1200w unit? I...

Masterbuilt mes 340g not working at all, with new parts

Ok so still mystified. Bought a heavy gauge appliance cord, disconnected the wires to the heating element and connected the cord to the heating element. Heated up, had 115v. Disconnected the temporary cord, reconnected the original wires (crimped them a little tighter before connecting) and...

Thanks guys Richie, in Mount Olive near rt 80 .. Was hoping not to spend $80-140 on a PID controller as I already spent money on the sensors and heating element. But am trying to decide. Trying to read about which PID will work with this 1200 watt unit. My wife is almost suggesting getting...
