I've liked combined Peach or cherry with half Alder wood. I usually only smoke about 1.5 - 2 hrs, the cool to room temp, then over night in frig. Vac pack for 3-4 weeks usually allows it to mellow nicely.
I may add metal to inside sidewalls. I dont leave un-attended. Just saves adding chips every 15-20, having heavy smoke, then almost nothing, and add more chips.... I also always have fire extinguisher next to grill just in case. The mes was my first smoker that I didnt hand make. So enjoy...

Everything's good. Smoked two pork butts and some ribs. Still have the temp sensor bypassed, but the sensors and the stainless hightemp connections came in so this weekend have some work to do.

Hi all,
So I opened the bottom panels for thr controller and power cord Loosened and tightened up the ground connections. Found one of the controller quick connects had a small yellow wire loose. Fixed that, and put everything back.
Started her up again with element cover open, and still...

I am wondering if there is a bad spot in the hot wire inside the unit. Unless I rip the back panel off (this version doesnt have the rivets on the bak) I cant tell where the plugs hot wire goes before it reaches the element connection.

Bought a heavy gauge appliance cord, disconnected the wires to the heating element and connected the cord to the heating element. Heated up, had 115v. Disconnected the temporary cord, reconnected the original wires (crimped them a little tighter before connecting) and...
Both red wires go to heating element Just unplugged from element so you could see the element connections. The black rubber insulation boot is also removed in this pic.
