A good friend asked me if I'd mind smoking a rack of ribs he had in the freezer then helping him eat it. Sounded like a great plan to me.
Did the prep work last night.
Sauteed some onion, garlic and Anaheim pepper. Precooked the bacon about 3/4 done. Stirred all this into the beans with a generous portion of brown sugar, some mustard and some black pepper.
Rubbed the meat...
Into the fridge until this morning. Into the smoker at 9:30 a.m. Using cherry wood chunks, apple juice in the water pan, chamber temp holding nice at 225* on a 40* Missouri morning.
Hour and 45 minutes in, time to give the beans a stir and first peek at the ribs...
The waiting game has begun.........
