I'm the new guy around here but I've been lurking for a while

I decided to try my hand at beef ribs today since I had nothing else to do :)

I found the best beef ribs I could find which isn't saying much but we will see how it goes
I didn't take the time to make a run I just used something store bought since this test is more about technique and tenderness then it is about seasoning

I also am trying a fatty again. Last time I did the "Bacon explosion" which didn't turn out the way I thought it would

This time I'm doing a basket weave of bacon, ground sirloin, provolone and sautéed mushrooms and onions
Hoping it turns out better then the last one

Looks good man, I think you are on the right track!! You will begin to perfect technique and skills the more you smoke!! But looks great!
