Moldy tortillas didn't ruin my fajitas!

I had an extra flank steak and decided that since I was working on some projects in the shop that I would pan cook the steak and sautée the veggies in the shop while I worked.

While I was cooking and working, the bride came out and informed me that the "fresh" flour tortillas that we got from the taqueria on Saturday were moldy! Ok, I'll just eat meat and veggies and skip the torts for a change.

It wasn't a bad decision!

I seasoned the steak, after cutting in half, with SPG, dried thyme, Mexican oregano, cumin, and a touch of sage, then seared them in the beef tallow I made a week or so ago.

The veggies were yellow onions, Anaheim peppers, and baby bella mushrooms also sauteed in the tallow.

I took the steak to 125 and let it rest while I did the veggies. Sliced and then put on the plate.

I skipped the tortillas, but loved the meal!
