After a successful whole chicken smoke yesterday I am going to attempt the 3-2-1 method on some spare ribs.  This is my first attempt to smoke ribs. I trimmed the skirt and tips and will be smoking them along with the ribs.  Gonna use them for the beans and a snack for me.  Wish me luck.  Any last minute advice?

Congrats on the yardbird.

StL trim will cook quicker than 6 hours. I don't foil and mine are done in 4-1/2 to 5 hours @ 250.

I would go with 3-1-1. Keep an eye on them during the last hour. Do the bend or toothpick test.

Yesterday I also discovered St. Louis trim takes less time. I did the 3-2-1 and the ribs were fall off the bone and tasted fantastic, but definitely a little too done. Next time I'll try 3 - 1 1/2 - 1/2 and see how that goes...
 
I am on the 2nd hour and its lookin good so far.  Not having too much trouble maintaining temp.  First time I put water in the pan. More to follow....
 
 
I will be buying Jeff's soon.  I had some store bought Applewood Rub thats pretty tasty, a bit on the spicy side, need to figure out how to kill some of the spicy before chow time.... 

I just foiled them, temp is leveled out, now just waiting....  Note to self: Buy the wide foil, it can be a challenge to wrap the ribs with the narrow foil.  Gonna go for an 1.5 then .5 unwrapped.  I couldn't resist eating the trimmed skirts.  Purty tasty!

Success! by my standards anyways.  3-1.5-.5 method.  Maintained 225ish the whole time with apple chips and water pan full.  Covered with apple juice during the 2nd phase. Defined smoke ring.  Very pleased.  Brisket for tomorrow!

Can't wait for football season!  I am in a house full of Tide fans.  4 against 1.  It's all good, especially since I live in GA.  As long as National Champs come from the state of Alabama all is good!!
