No time for outdoor cooking today and my wife isn’t feeling well so thought some soup might hit the spot for her. Whipped up my take on a simple Zuppa Toscana tonight. Highlighted by Italian sausage, onions, mushrooms, sun dried tomatoes and spinach in a broth of chicken stock , cream and Italian spices. Served with some keto garlic Parmesan breadsticks. Got a big feeling I'd really enjoy that soup. Missed you original post on it so had to go take a look see.
I copied your recipe, and plan to make a batch to take with me this November when I head north for the winter log haul. I figure I might have to skip the spinach, Don't think it would survive being cooked, frozen, and reheated. But it will sure be great after a cold day.

Wow Jeff, that looks REALLY good my friend. Minus the chicken stock that's something we would both love around here and soup weather is on the horizon. I'll just sub veggie broth for the chicken and have a blast with a big pan full of that. Beautiful meal and sure hope your wife gets to feeling better pretty quick.
