Picked up a killer T.T. while my wife and I were in SF for an S.F. Giants game the other day. Man was it worth the price we paid.

Rubbed it up with Heath Riles Jap. & Garlice rub that I jazzed up with some ancho chili powder, espresso powder, and some coarse black pepper.

Made up a smoke bomb, with some foil and some Hickory chips.
Then fired up the Weber gasser, because I was being lazy. The smoke bomb foil pack goes right on top of the flavorizer bars on the hot spot of my grill, which is the back right side.
Then cranked up all three burners to high until the smoke started rolling, about 15 minutes.

Oiled the grill grates with some avocado oil on a rag. Then tossed the T.T. right on the grate above the smoke bomb. 15 minutes on the first side, then 10 to 15 minutes on the second side.
Into a covered foil pan for a 20 min rest, while the foil pouch of shrooms, which were seasoned with S.P.O.G.W.
The "W" stands for white wine.

I forgot to take pictures of the sliced roast, but did get a plate shot before We devour'd it.

Damn was this good, just had a bag of chopped salad with the meat, and shooms.

It was so good, I had to bring a couple plates over to my neighbor, who's been sick for over a month. Her and her friend loved it as much as my wife and I did.

Damn that looks great ! Fantastic cut of beef at lower grading . I bet that was awesome .
Last one I saw here was $18.95 a pound .

Boy oh boy that TT is done perfectly Dan. TT is crazy expensive in my neck ok the woods.
