After seeing Jeff's Zucchini Boats I knew it had to be done.

Filling:



Mushrooms, Sweet peppers, Hatch and Pablano peppers.



Ready for oven



Out of the oven



And Plated.



This was really good. Wonder how this would freeze as I have to much!

Nice work Brian, I am not such a zuch fan but those sure look good. I love Poblano and would love to find hatch peppers but have never seen them here.

Thanks all. Had some left overs last night and they where really good. This one of those things that get better with time. Going take the rest to our meeting at the brewery tonight to unload.
