Lunch was a just shy of 1lb Ribeye steak seasoned with new seasoning I just received. I cooked on high smoke(220 average) until 115 with a mix of hickory/maple and cherry pellets.

Then I put it on to the flat top where I over cooked it a bit but it was it still super juicy and very good.

Love a reverse seared ribeye! Although over cooked ribeye can wreck your day.

Try smoking it to 125-130 and then hitting it on a super hot grill or cast iron skillet for no more than 90 seconds per side. You’ll be happy about that.

By the way I’m not even sure I should be giving advice to someone who eats ribeyes for lunch on a Tuesday. I must have made some bad choices in life cause I had a turkey & salami sandwich for lunch. Lol!

I have been off work for a handful of months leading up to the surgery and recovery for my second total knee replacement in 4 years. Wait until you see my breakfast and dinner posts that im working on now lol and i was on the road half the day.
 
Ouch! Good luck with that replacement. Sounds painful.

Give that reverse sear a try with my temps and let me know what you think.
