Long work stretch meal prep

As usual as a shift worker summer vacation coverage is a very busy time for me. I usually take my vacation in the winter and head south to get out of cold but July August is crazy Overtime cause everyone else does summer. Anyway today is my last day off before a long stretch of 12’s. My only day to meal prep for lunches. On the menu Is plate ribs, burger patties and brats. I thawed a lb of breakfast sausage because I intended on a meatloaf but no time for both ribs and meatloaf. I usually struggle with temps when juggling multiple proteins that cook at separate times. The meatloaf was so good though.

I don't miss the long days that's for sure. Was never a shift worker outside of the military but job site deadlines meant a lot of long days and nights.

After posting this morning realized 2 things. I have hard boiled eggs so figured nows the time to try smoked scotch eggs. And 2 I’d better get to cooking 🧑‍🍳

You’ve probably already got it on the smoker, next time consider a fatty. That takes care of your meatloaf and scotch eggs craving in one go. They’re fun and if you get a little fancy with them it’s carousel worthy pics.

I am a bit of a novice. What’s a fatty?
I know you’re gonna like this… there’s no set recipe… I take a pound of ground beef in a ziplock and pound it flat. Cut away the ziplock and do the same thing with breakfast sausage. Stack one on the other, now layer in some cheese, veggies, eggs, anything you want. Roll it up into a log, season it with whatever rub you want. Some wrap it in a bacon weave, then season it again. Smoke it until the bacon is done (or 160 center). Let it cool a little and cut it into slices. It’s a crowd pleaser/ novelty that everyone talks about. Sometimes it overshadows the rest of the meal.
