It’s been a while since the X-Fire has burned so it was time to create some flavor flames
Started with a chimney of coals then added 1 oak split and one cherry split and let nature create some magical heat.....
Then the TT went on with the grate elevated to give it some time to take some smoke.
It hovered above the fire & smoke for about 40 mins and a IT reached 100.
Then it was lowered to right above to get a nice sear!
Bingo IT 135!!
Now the final plate! A fresh “arty”, garlic mash, home made bread sticks and a red wine balsamic glaze!!! Was kinda bummed no fresh herbs for the top.....but we survived.
