Been working like crazy so decided to treat the family to some beef ribs smoked over oak :-)

All trimmed & seasoned with SPOG with a splash of sugar & lemon pepper

Getting the X-Fire set up for an indirect cook. Started with a bed of coals and some oak splits. I also have a couple extra on the floor to have them nice and warm for when they need to go on the fire so they fire up quick.

I’m also waiting for the wife to get home from the farmers market....she texted to say she found some goodies to go with dinner.....

I raised up the grate a few cranks so it is sitting just about 5 inches below the tel-tru probe so the ribs are in the sweet spot of the indirect heat!

I love that smoker

:emoji_blush: Thanks! I’m becoming rather fond of it!

It has a lot of retained heat....the last 90 min just stayed at 250ish without any fire or adjustment.

The boy and me just need to set aside some time to finish it out!

Thanks! The XFG works really well so far (I'm glad because it was a little bit of a gamble.....). The boy and me are looking forward to finishing it out with all the different cooking modes!

However, its actually sad in a way, cause the Copper Pot has been really lonely since the XFG went live......

Also, that smoker you have is awesome! Is that firebrick all the way around? Did you build that smoker?
