WSM Turkey #2

Using some apple for smoke.

Here is my charcoal chimney sitting over the burner.

Some things i have found as i use the WSM

1. Hotter temps if the charcoal is in one flat layer, piled the temps are not as high.

2. I find that the WSM works better with all the vents full open.

3. When finished close off all the vents and reuse the charcoal for your next smoke.

4. Before each smoke take a wadded up chunk of foil and rub it all over the insides, top, middle and bottom.

5. Foil the top of the water pan if not using water. Easier clean up.

6. The dome thermo is pretty close but dont rely on it 100%

7. On non windy days if you invert the charcoal door you can bump the temps close to 350*

Im sure i will add more as i use the WSM. Feel free to add some yourself.
