This morning I threw 4 7.5 lb picnics on the 18.5 wsm. My girls are home monitoring the temps as I have to work today. I can't wait to get home and see how this smoke is going. I have loaded it up with ribs before but never this many shoulders.


They were rubbed last night with Jeff's rub and are cooking over kingsford regular with hickory chunks for flavor.

Will report back when I get home.
 
10 hours into the smoke and still rolling along at 223. I absolutely love this smoker :sausage:. I'm not going to foil these and see how they turn out. I hope they don't come out dry.
 
They won't, i never have foiled butts since learning to smoke and always the best juiciest pulled pork ever.
 
The pork turned out great. I ended up foiling them the last two hours to speed things up a bit. I finished one with a finishing sauce and the other without. I can't decide which I liked best they were both so good and juicy. I took some into work today and it all went really fast. Here is a shot of the first one that came off.
