It never ceases to amaze what I learn from you guys here! Hadn't been on for quite a while and got on the other day. Noticed a post on poaching the sausage to finish. Looked into it a bit more and thought it would be something to try. What a time saver and the salami is so moist!  Seems to be just as smokey flavored as when I cook it all the way in the smoker.  Thanks to all that posted about this!  I did 10 lbs  of venison/beef salami today  here is a pic when they are done....Sorry no sliced pic but we did try one ....Awesome!

Well Dave,

I stuffed them yesterday 50% deer and 50% 80/20 ground beef mixed with Lem salami mix.  I split the 10 lbs in half and mixed in 1/2 lbs of hi temp cheddar. Then 1/2 lbs hi temp pepper jack and a cup of jalapenos and the juice in the other half, they hung out in the fridge until this morning.  Before I left for work I hung them in my Bradley.  Got the pucks loaded so all I had to do was have my Daughter turn it on at 2:30 I am in Iowa so it was cold enough in the shed so I wasn't worried.  She turned it on and when I came home tonight it was smoking away.  So after 4 hours of smoke I moved them to my electric roaster with 160 degree water.  I had to temperature probes running one monitoring the water temp and the other in one of the salami's.  It was just shy of a hour in the bath when they hit 154 degrees. Took them out into a ice water bath and after they cooled a bit onto the table for the pic.  Really tickled how they turned out , Have been good before but just a bit better this time!

Thanks Mark! I'm just starting to get into sausage so I'm reading all I can and getting ideas. That sounds really easy!
 
Did another 10 lbs last night ..... Boy this works good! 4 hours of smoke and a hour or so poaching, really speeds things up and makes a good looking and tasting salami!
