My father-in-law has been helping me fix up our three season room, and part of the deal for his help is to feed him. Today I put on some chicken thighs I picked up for pretty cheap. Half were rubbed with McCorrmick’s bbq rub and the other half were rubbed with Barnyard Dust.
The thighs went on my WSM with some apple wood just as we got started this morning. A little over two hours and the thighs were over 165. I pulled them and let them rest about an hour while we continued working.
Stopping for lunch, we set up the thighs (toothpicks with bbq rub,Barnyard Dust on those without toothpicks), some Texas caviar and chips, and coleslaw.
Both sets tasted great but my favorite was the bbq rub...my father-in-law agreed, but he’s always happy to get a meal he didn’t have to help make. Our bellies were full to keep on working.
