Hello!

Got back into deer hunting, which led to venison trimmings, which led to grinding for burger, which led to thoughts of sausage, which led me here. :)

Just mixed up a batch of snack sticks using 80/20 beef and Walton's seasonings - only a 5 pound tester batch as a trial run. Tested out the new 7L (11 pound) Hakka sausage stuffer and I'm impressed! Only one blowout using 19mm collagen casings and virtually no air pockets.

They are resting in the fridge now and will be going on my MES 30 with a AMNPS and hickory pellets tomorrow. I'm used to my BGE, so going electric for this is a new adventure. Already pre-seasoned it and made a "jig" for the top to fit 6 oak dowels for hanging sausage.
