Winter cravings!!

    We had some extra pork trimmings at work the other day so we decided to make some Pizza Brats! It is our own recipie we came up with and I must say it is awesome![​IMG]




    Mrs. SOB found out we made them and pleaded with me to bring some home. Little Miss SOB wanted me to go in on my day off to get them for supper yesterday![​IMG] NOT! So I brought them home tonight...just one problem...no grill. Propane grill crapped out on me last spring.What was I to do???[​IMG] AAAAHHHH YEEESSS My UDS!!! I just loaded the charcoal basket 1/2 full with briquets and oak chunks. Plenty of heat and room for some Flat Iron steaks I had that needed cooked. So sit back and enjoy the Qview! It was delicious!




    It started to get alittle dark before things were done.

    SOB,

    Can just about anything be put in a casing?

    I bet you my kids would like these...

    Can you share the recipe?

    Pretty much anything you can think of can go into a casing. I like thinking out of the box. It is one of the ways I offer things, to my customers, that the big stores like wally world dont offer! Green corned beef sausages for St Pattys day...Chicken cordonbleu sausages...chicken bacon and cheese sausages...We try all kinds of ideas!
    when I go to work on wednesday I'll copy the recipie and send it to ya!

    I previously posted a Reuben Sausage, and you helped me get started.

    It's really not just the same old same old from the chain store anymore!

    I'm think a "Jucy Lucy" in a casing would be interesting??

    We've been thinkin at work about making a cheese stuffed sausage using a kubbe attachment for our small grinder at work.

    Dont know if you remember a hotdog that was made many years ago called frank-n-stuff a hotdog with chili or cheese stuffed in it. Ahh they were so good.

    mmm pizza and 297 a pack thats dirt cheap i dont think you can make them around here for that price. they look great i would like that recipe too.

    Well I finally rememberd to grab a copy of the recipie for the pizza brats we make at work...SHHHHH..... its our own secret recipie! Wink Wink!

    this is for a 25 pounds of pork but it shouldnt be too hard to divide it down if you want to make smaller batches.

    25 pounds fresh pork fine ground (1/8")
    1 bag of sweet Italian sausage seasoning

    3 15oz cans of your favorite pizza sauce
    18 oz of pepperoni ground fine (1/8")
    1/2 cup of oregano leaves

    we have quite a customer base at work for these "brats" as we call them.
    Parents say there kids just love them. We have tried using regular shredded cheeses but the just melt out and lose any cheese flavor.
    Hope you enjoy them my family really does!!
