I wasn't planning on Q'ing today on account i wanted to catch up on some work around the house. But the ol' ball & chain wanted brisket and they do say happy wife happy life... besides can't not Bbq on 4th of July, that would just be sacrilege. Seasoned it with some Butt Rub and Montreal steak seasoning for some texture. Smoked at 250f with a mix of Cherry and Maple until it hit 165, then it got wrapped in foil with a bit of beef broth. I also doctored up some Bush's baked beans with a little bit of extra bacon, onions, garlic, more butt rub , worcestershire, brown sugar, and a bit of beer. The wife worked on the rest of the sides. She made corn bread, baked taters and jalapeño poppers. Brisket was nice and tender, it pulled apart just right, but It did dry out just a bit. Luckily i saved all the juices from the foil pouch. All in all it was not bad at all for my second attempt at brisket. All the guests enjoyed it.
