I’ve always smoked my wings with a water pan but need the space for more this weekend. Anyone have any experience smoking buffalo wings without a water pan? Is it needed. FYI...I have a masterbuilt dual fuel propane smoker.
 
I have never used a water pan with anything in my rec tec. before that I stopped using one in my WSM....

make wings all the time without issue and great product.

I cook with a water pan often filled with broths , spices etc to have au jus. I never use water or liquid when I do wings. I smokem hot at 275 an hour and 300 the rest of the way.
 
I usually put them on 180 (high smoke on a pellet) for a couple hours then kick it to 350 for crisping up.

Never use one in my mes. I’ve actually read that it’s not needed with the mes bc they are so moist.
