Wings with new vortex

I just received my vortex today and a couple of other toys... So why not cook some wings !!

I got my new cast iron grates yesterday.. Threw a couple of T-bones on them.. Great sear and grill marks !!( sorry, didn't take pics.)

Put some foil around the bottom and threw in a few lighter cubes... I am sure I will most always use the chimney starter. In this case I had time to waste...

Picked up some wings at my local meat shop... 3lbs of wings and there were only 8 full wings.. These were sold as jumbo.. LOL I've had turkey wings smaller than these..
I used the Buffalo wing rub that came with the vortex... I also marinated the wings for about 4 hours . I used tips slaughterhouse brine.

After 30 minutes or so, it was getting a good "hot" look...

After about 10 minutes, the therm was almost pegged at almost 600°. I highly recommend good heat resistant gloves when grabbing the lid handle to rotate or remove..

Pu the wings on and added the center grate insert. Put a chunk of apple wood right over the coals..

Ten minutes in......

20 minutes and these wings are done ! Never expected them to cook that fast, but I'll take it ..

Plenty of fire left , so I threw on some brats around the edges.. After about 15 minutes I seared each side for about 10 seconds each.

I think I will enjoy the Vortex and the new grates..Lots of people say that the Vortex makes the kettle a chicken cooking machine. I would agree.. Thanks for looking.
 
I love my Vortex. The seasoning is very good too. Great looking wings. I will be doing a tri tip soon with the vortex.
 
That’s the main reason I want to buy a kettle and vortex is that chicken right there.

They look phenomenal. How’s the skin?
 
Looks good. I love my vortex I’m sure you will too. For what it’s worth, Those charcoal starters you use, I use to use 4 of them also, tried it with only two and it got the coals lit in just about the same time as 4.
 
That’s awesome! Love all the pictures you posted! Wings look amazing! Question about the vortex, about how big diameter hole on top of the vortex is it?

Those wings look terrific! They are a favorite around here for sure. Great write up as well!

I'd really like to get some of those cast iron grates for my Weber. Vortex too for that matter.
