I'm looking to make some wild turkey sausage as I have a fair amount in the freezer. Thought of some of the Chicken sausage recipies but,.... with as little fat that wild birds have should I use the white meat and add fat to it? Or should I use the dark meat or a combo of both? All suggestions and recipies welcome!
 
I'd use them both and make breakfast or Italian sausages from it; enjoy the lean!  It will be dry but add some more water to it to maintain a level of moisture and don't over cook it, just to 155° degrees.  Would be great to make stuffing with too!
 
I would add boneless chicken thighs at a 50/50 ratio
