I am brining a turkey, for today, I forgot about it yesterday and it got a little warm in the brine. But so what?  So what if some bad bugs got in my turkey, if you get the right temperature the bugs die.....right?
 
Yep as noted, you could be in a bad spot.

I give myself a lot of leeway when I cook only for myself. If I'm feeding someone else, it's by the book (40°/140°- 4 hours)
