Who's braving the cold and rolling smoke this weekend?

It's been unusually cold in the Midwest this week with sub zero temps on the horizon for another week or so but everyone's hungry for some BBQ and we just took delivery of our first Shirley Fabrication cooker so I got her fired up this morning thankfully I had already seasoned it.

Pit got to temp way faster than I would have thought given the cold, got a SRF black brisket and tossed a Butterball turkey on to keep it company in the smoke.

Got 2 racks of ribs and a tenderloin beef steak, thinking about doing something else on there aswell. It’s 32 here and I’ll be running a real smoker aswell. Hopefully today and maybe go fishing tomorrow

We made it all the way to 7 above currently lol!

Our local spot for the best meat prices has butts for .89 cents a pound this week, gonna stock up tonight after this cook is all done and put away for the day.

I got these at .99 a pound. Picked up 4. The other 2 got turned into breakfast sausage. Kind of wish I had gotten a few more.

Cold here in Hazel Park too, but warm compared to what its gonna be next week. Thinking of going to Costco and getting a packer brisket and tryin the brisket in a pan recipe. Maybe it will finally turn out good. I haven't had much luck with the past 5 I've cooked. Just don't end up as moist and tender as I want

Planned to do a batch of jerky this weekend in the MES but it will be cold and snowy, with high humidity. After giving it some thought I came up with a Plan B. I set up the old propane smoker box in the barn, put a hotplate in it and hooked up my PID controller to run at 120F. I'll do one hour at 160F in the oven and then move the jerky to the smoker box to dry. I have heat in the barn so I will be all comfy and warm and I can watch the Rolex 24 Hour on the TV machine.

Yea, if there's room why not? I'm gonna smoke about 10 pounds of Keilbasa when I pull the turkey off.

Doing some pork tenderloins, and double smoking a ham. Wasn’t planning on anything, but the freezer door somehow was cracked open, and that stuff was partially thawed.

Turkey is done and resting, brisket is getting tight just about ready to pull and foil it to finish.

It was 22 below when we got home last night. Luckily it warmed up to 7 below when I started my bacon smoke this morning.

I usually run birds in the smoke for about an hour and half and then finish them in turkey bags to get them tender and capture all the juices in the bottom of the bag.

Today's turkey did not disappoint! Man these are good swimming in the juice and pull apart tender, I'm never frying one again.

No smoke today for me. Too cold. Its 60* right now. (Runs and hides). Leftovers for us today.
