Anyone have rough times if I'm smoking a while 60 pound hog at 250 -275? I see so many posts give different answers and youtube videos are sort of all over the place on time and temp.

It's a custom offset stick burner that I bought off a welder. I'll attach pics of it. That give you rough off of size. Resized_20210703_140125.jpeg

If you can hold solid temp, you should finish in 10-12 hours. Maybe sooner. The weight of meat doesn’t matter as much as having enough cooker to cook the meat, you should be fine.

Nice smoker. Does it have heat baffles?
I've never cooked a smaller whole hog,
My experience is full size (150# range) and with indirect heat units (not offset). About 8 hours on those units.
Do you have a A frame rack to support the carcass and open the rib cage? I cannot see by the photo if you have enough rack space to splay it flat.

I should be able to fit it on but at worst I can do it racing style. There is no baffle plate in the smoker.
