Who smoking for Labor Day BBQ

Gonna smoke some pork chops for a short time then finish them up in a hot skillet.  Saturday I am throwing a couple yard birds on while I get my homebrewing on.
 
Haven't planned anything yet. This weather has my asthma in an uproar. 96* here today and am hoping it breaks for the weekend. Haven't cooked for the last two weeks due to the weather, breaking my every weekend smoke for the summer. We'll see.
 
Doing a brisket and ABT's

Marinated the brisket in a kentucky bourbon brine overnight and then on the smother

Stuffing popper with Italian Sausage and cream cheese, wrapping in bacon
 
Labor Day is spatched bird, some brats and CSR's. Next Thursday, it's going to be a couple of butts and some baby back loin ribs. I can't get everyone here at the same time, so will need to split the menu. That's OK, 2 good cooks are always better than 1.

I have one rack of untrimmed spare ribs in the fridge.  That's definitely not enough.  I have a turkey and 17 lbs boneless butts in the freezer that I can fast thaw in cold water, but a brisket just might soar to the top of my choices.  We'll have to see what's available at the store Saturday.    
 
Going to be smoking a couple of Boston Butts on Saturday for BBQ and will be doing a smoker full of Baby Backs on Monday along with whatever else the OWMBO comes up with.  Try to post some pics on Saturday and Monday of the Qview.
 
 
I am being real ambitious...

For appetizers:

Assorted cheeses (smoked and non)

Buffalo chicken sausage strombolis

Hot Italian and Kielbasa sausage

ABTs and sweet stuffed peppers as well

For mains:

13 lb. Brisket (smoked friday or saturday to be reheated in vaccuum packs on monday)

9 lb. pork butt for italian style pulled pork with broccoli rabe and provolone sandwiches

3 racks of st. louis ribs

Souvlaki marinated chicken wings with tzatziki

Cilantro Turkey Burgers

Beef Burgers

Dutch's wicked baked beans

Pasta Salad

Everyone else is bringing dessert.  Wish me luck!

My immediate family is about 25 people so I have a lot of mouths to feed.  I usually have way too much food but I don't mind leftovers!
Did you forget to put my RSVP into the mail?

My pre-Labor Day weekend Thursday night will be spent fending off the raccoons and other local denizens...

...waiting for my WSM to come up to temperature and off we go...

We're having a block party on Labor Day and I'm thinking about a pork butt and some cowboy beans.  1st ever block party since we've lived here (2nd year), but the neighbors say they have them yearly when time and weather allows.  Should be around 20 to 30 people and burgers and hot dogs are the norm with everyone else bringing covered dishes. Who does this anymore?  Any way I'm looking forward to it.  We haven't met all the neighbors yet and this will be a good opportunity to get to know everyone.  Hope they like smoked pork and cowboy beans.
 
 
I have to work, but holiday pay will be nice
I was feeling kinda bummed about having to work and missing all the weekend fun so...

I bought a 18.5" WSM today brought it to work and just finished smoking two racks of ribs.:biggrin:  Good thing I'm on nights. lol


side note: the WSM did great, and I am very pleased with its temp control.

Well, weather changed here, prepped a 3.75 picnic shoulder roast/steak I picked up at a local korean market on sat with my butt rub. Fired up this morning with pecan/cherry over stubbs on my hybrid. Ran 250*-60* for 6hrs till stall @163*. In pan with a mix of some apple juice, acv, peach syrup and tony c's extra spicy. Foiled and ran thru stall. Back on with some rub and took it up to 270+/- for a little crunch. Off at IT 203* rested in pan covered with towels. Pulled and used a tweeked jj's finishing sauce. Chill for tomorrow. Have a great Labor Day.

No smokin. BUT did a 4 gallon pot of scratch spaghetti sauce yesterday and 5 lbs of meat balls . also did a butt in the crock pot  pulled it for bbq pork and cuban sammies.

  Today i have a 10 lb butt boiling on the stove w/ onions peppers and celery to make boudin this afternoon.

Maybe i'll smoke next sat to get a break LOL
