Who smoking for Labor Day BBQ

No smoker for me. Too many parties that people grilled at and today I'm having my left over PP from a couple weeks ago.
 
I fired up the Weber SMC at 5am this morning and loaded it with about 8lbs of chuck roast.  I am just about to put 2 huge racks of baby backs in.  In about 2 more hours, I'll add a pork loin that I brined overnight and then rubbed with Head Country rub.  Gonna serve that up with some corn on the cob, potato salad and a really nice tomato salad with some heirloom tomatoes my wife picked up at Whole Foods (for like a million bucks.  grrr).

I did a couple racks of spares. They come out terrible, i bought from a new meat market the way they cut the ribs you see the bones sticking out of the rack in the middle. Just awful.They wont get my business anymore! It wasn't worth taking pics for Qview!

Smoked some Bacon-On-A-Stick spareribs yesterday using Bear's recipe (except I used Cure #1 instead of TQ). Thanks also to DiggityDog for the great Cure Calculator - helped me to get the exact amount of Cure #1 per weight of the ribs. I didn't get the full 2 days of curing that Bear called for in his recipe, more like 1.5 days - but the cure still went all the way through. My ribs were a bit thinner than the monsters in his recipe's pictures, so that probably helped.

These were the BEST ribs I've ever made and or eaten. No sauce required. Simply outstanding... Which is a good thing since I was having friends over...They loved them too!

I also made baked beans in the smoker using Dutch's recipe. Full strength with 2 jalapenos and the mustard powder. They weren't very hot though. I de-veined the peppers, so that may have reduced the heat... I used pineapple "TidBits" instead of 'Chunks' for smaller chunks in the beans. My daughter loved them, and she's not usually a baked bean eater! These were a bit too sweet for my taste though between the pineapple, brown sugar and ketchup. The beans were hanging under the ribs catching drippings during the smoke, so I was hoping for a heavier smoke flavor, but the sugary sweetness seemed to cover up any smoke flavor. Maybe the left-overs will be even better as the flavors meld overnight... Will find out tonight!
