I managed to make delicious salmon jerky -

the recipe called for hanging the salmon from the rack - looks like a regular oven rack (forget what smoker they had)

however - my WSM 18.5 rack is too small between the rods

so, I improvised and used a grilling basket

It worked fine and the final product was delicious - however, I want to drastically increase my capacity and packaged for family and friends. I will also want to do cheese when it gets cool enough.

I found some mods for adding grates (suspended with bolts) or drilling into my WSM - but the issue I am having is that the grates themselves are expensive. She who decides has already indicated I need to be on a budget with my WSM.

I found the hovergrill - but super expensive

After super macgyver went rampant in my head about somehow hanging grates or cutting rods and other craziness... I got to thinking about using steamer racks or cooling racks.

^steaming rack

^cooling racks

There isn't much that fits the WSM nicely - but close enough I guess.

I would imagine that these will work as the temp doesn't get too hot -

1) Has anybody used these in the smoker and have any pro's and con's?

2) What is everybody else doing (or have done) to increase their capacity in a smaller smoker?

3) Am I not finding the right site for buying racks/accessories like this. I've got to imagine that I'm not the only one.

I went to a used appliance place and bought used oven racks.

You can cut them to any size you want to make them fit.

If you can find a junk stove, you can scavenge them there.
