Totally agree with you. Find a small locker somewhere near you and develope some kind of relationship w/ this person. Tell'm your a professional smoker and need the best cuts available. the guys that own the one here are outdoorsmen like me so thru that common interest they always steer me to the best meat available. I use a case of beer now and then to make sure they get rewarded for helping me. Just a thought.

I agree wayside, thats how I get my briskets too. Alot better than the chain store briskets, been there done that.

It also never hurts to bring them some of your product. My butcher absolutely loves my pulled pork. He always asks me what kinda sauce I put on it. I tell him its a secret and smile. You see, I don't sauce it, I don't even put a finishing sauce on it!

My butcher is also a beef farmer in southern part of our county, raises and kills alot of beef all year long. He's a good ole boy about 68 yrs old, and fit as a top. I could just sit and listen to him for hrs.

I'm usually pretty indecisive anyway but I think the butts have it for me too. Even though I just picked up a brisket at Wally World for $1.67/lb. and ingredients to make some home made sauce samples. Also had to get the stuff to make a couple of quiches for my aunts 60 b-day.

I'm thinking that pork is cheaper and almost fool proof to smoke. That has to be the reason butt is more popular???????????? Eat beef it's better fer ya figure.

I love to smoke butt,s for the ease of it. Or any pork for that matter. BUTTT....(pun intended) brisket is the winner!
