Hello all I'm from north Texas and love BBQ and just good cooking in general.  I just got my first smoker as a b-day gift from my girl and am preparing to make my first Boston butt on this smoker.  I have a "Kingsford Sierra" smoker it should be a good enough starting point its already a step up from what i was using.  I was using a modified gas grill that I burned wood in it wasn't pretty but it worked.  Being from Texas I've been eating BBQ since probably before I could walk.  In my early teens a family member went BBQ crazy and basically took me along for the ride.  I had to of helped prepare several dozen briskets as my brother in law learned and perfected his method over several summers.  On my own I have cooked several racks of ribs and done pulled pork but have yet to tackle a brisket...  But thats coming soon.. Very soon.   

I tend to go a little nuts varied ratios of all of this goes in my pork rub.

Whatcha say, hippy?! I don't claim to be super experienced, but I've learned a lot by writing down what I put in my rubs/sauces. Given the assortment of spices/seasonings in your pic and assuming that's not all you've got, you might want to start logging your cooks if you aren't already doing so. It's a great way to refine your approach to different meats and has really helped me out a lot.

NC Your right that's not all I have.  Yeah I keep track of what I use if it turns out extra good I always right it down. 

Here's what I marinate tilapia with when I make fish tacos.

1 TEASPOON CUMIN

1 TEASPOON NEW MEXICO CHILI POWDER

1 TEASPOON ONION POWDER

1 TEASPOON CAYENNE

1 TEASPOON CRUSHED RED PEPPER

1/2 TEASPOON PAPRIKA

1/2 TEASPOON KICK N CHICKEN SEASONING (PARSLEY RED PEPPER ORANGE could sub mrs dash)

A FEW SHAKES OF RED CURRY POWDER AND A SHAKE OF LEMON PEPPER

2 TABLESPOONS OF TIGER SAUCE (MAYBE LESS)

JUICE OF 1/2 OF A LIME
