Cherry Coke ribs for me. Plus I found a 4-rib piece, saved from a beef rib roast in the freezer, all by its lonesome. So I invited it to the party.

Pulled from the cherry coke brine after 36 hours.

Nothing on the grill today. Got a rack of spares for tomorrow.
Ground a boneless pork shoulder today. Making some JD breakfast and Italian bulk sausages
 
SIL made burgers for the fam. It was a lovely afternoon with minimal effort from me. Nice change.

Played with grandbabies, slayed everyone at baggo, red white and blue cocktails. good times.
 
I did my first smoke for people other than me and my GF. Smoked a meatloaf, turkey breast roast and "grilled" some beer brats. Everything turned out great. I was too busy cooking/hosting and forgot to take pictures.
 
Hamburgers on the BGE with grilled red bell peppers and sauteed Chanterelle mushrooms. I brought a charcuterie board to munch on while we visited and prepped the meal.

We went to a baseball game yesterday, then watched fireworks until midnight. Today I'm smoking some steelhead trout and making injections for an annual BBQ on Tuesday.
About time to make some smoked fish using your dry cure. I thinking Steelhead from Sam's? It a bit cheaper than Salmon. Is the dry cure the way you do it?

Edit: I picked one up from Sams. It is super soft. Cant hardly handle but going with it. I had some left over cure I had vacuum packed and using that.

Probably farmed. They tend to have soft meat, as they're not fighting for survival in the wild.

I tried getting refund online but have to do in club. Cant hardly even pick this thing up with coming apart. Guess I going to have to go back up. Just dont think it worth messing with now.

Sorry to hear that. Yes, I use the dry cure method, usually 6 to 8 hours of cure time. The steelhead I use is from Sam's, and it's vacuum packaged in a blue sleeve with a built in tray and boneless, but skin-on. It is farm raised, and that accounts for the higher fat content. I have never had any texture issues when rinsing raw... in fact I rinse both sides of the whole fillet in the sink. The curing tends to firm up the flesh, and I give it an air dry on the counter for a few minutes and then move the tray (and the fan) into my garage fridge for 12-15 hours before smoking.
