Good day everyone. Will be doing some St. Louis ribs and chicken this weekend in my Dyna-Glo smoker. What will be cooking in your this weekend? :):cool:
 
As of now nothing. Damit weekend is already looking like #*%^.... lol!

Ribs & chicken is a great combo! Sounds like you have a nice weekend smoke planned.

Looks like a nice weekend. I find some time and I hope to do meatloaf and some chicken thighs. Alos hope to maybe try my hand at some cheese. Found some good sales this week!!! That part kinda depends on weather. May actually get too warm.

Might try a frozen cowboy steak. I watched a YouTube video where a guy grilled three steaks; one was room temp, one right out of the refrigerator, and one still frozen. He grilled them to the same final IT and the frozen one was the most tender and moist. I've got a frozen cowboy steak in the freezer, my last one, that is just begging to be grill smoked.

Hopefully some cheese on my new qmatz. Still trying to decide wood but definitely dust this time. Apple/pecan/oak are the players.

Nothing fancy or long, going to do some maple-chipotle chicken breasts in the smoker and some sour-dough burger buns in the oven to use for sammies with the left over chicken. Yum, yum

Nothing for me this weekend, but my wife's birthday is on Halloween.
So I bought a 2" thick bone in Angus ribeye.
I had it cut from the chuck end so it has fantastic marbeling.
We are gonna eat good on Halloween!!!

My FIL is coming to town and he requested a prime rib. Yummy yummy!

Here’s the one I did for him at New Year’s this past year. Hope it comes out as good.
 
Probably nothing here it's suppose to rain all weekend with temps as high as 42*. If there's a break I'll try to whip up something quick like wings.

I plan to do the initial break in on my new WSM so I'm sure at some point I'll have to put something in cooker. Can't just waste all that good heat after a couple of hour burn off can you? Might try a Pork butt? undecided.....

Doing a get-away camping trip to the coast this weekend. Normally, when I'm camping I like to pull out all the stops for something amazing smoked, in a Dutch Oven or over a wood fire. This time it's simple brisket mushroom burgers on the grill by the Mrs. request. There wont be a Q to babysit, but there might be some Pendletons involved while watching and listening to the waves crash.

Tex, burn-in with the WSM??? Totally not needed. Just wash the grates and your good to go. Get that food on right away. You'll want to build up the seasoning around the door and lid to seal up smaller leaks. Some WSMs may need a tweak to the door, but most are good to go right out of the box. Remember it's porcelain coated so no manufacturers oils.
