Sunday: Cured Apple Wood Smoked Cornish Game Hens.

Martin-tell me about the Sunday smoke!  Cured?  Cornish Game Hens?  How did you do this?  Brine with a curing salt, did you cure prior to smoking?  We love the Cornish Game Hens, so I am really interested in what your process was?

Smoking a chuckie, Dutch's wicked baked beans, and sweet potatoes.

I smoked a sweet potato by accident last weekend and my son loved it so much he asked for more this weekend.

Yes, cured with cure #1 in an equilibrium brine and then smoked.

Chuck & Brisket (Flat)


Added a couple of T-Bones & a sirloin reverse seared after hour and half on the smoker.


Brisket after fat cap scrapped off sliced him up for samiches

No pics of the steaks after the reverse sear, everyone was starving I had to feed them or else!

Saturday I smoked some catfish for a smoked fish dip and Sunday I did some ribs! Both indirect heat on a Webber kettle!
