I'm using for the very first time my Redi Check remote Temp probe.  What a great little gizmo.  I read the reviews here on SMF and decided I had to have one. Very easy to use. 

 
I'll have to tell now and show tomorrow...planning some reverse seared ribeyes.

Pork is pulled. Came out great.  That is a bottle of SoFl's finishing sauce on the right found here on our Pork Sticky.   I assume the bottles on the left are self explanatory

Just put some babybacks into the MES 30. I got too busy to take pics of the process, but I'll get some of the results later.

I used the Big Bald BBQ Rub from Jeff's book, but I substituted maple sugar for the white sugar.

I just had my wife tell me her friend is having a party today for Cinco De Mayo. I was asked to bring some meat for tacos. Thank goodness for all my smoked pulled pork leftovers. I thawed out about 3 lbs. and diced real small. I then pan fried until started to see some crispyness and threw into my 3 container crockpot. also bringing home canned refried beans and some queso dip. Not bad for 15 min. of prep at short notice.
 
Smoking 3 racks of ribs and making 20lbs of jerky.
 
Made a gumbo today using some of the left over pulled pork I smoked last weekend.  Other than that, watched LSU baseball and softball with a beer or four.
