It is a roll of breakfast saugage that has or has not been rolled in a rub and then smoked to delicious perfection.

You can also stuff them with cheese, peppers, onions or whatever you can imagine.

They are best sliced hot off the smoker. They freeze well and reheat really well in the wave.
Chopped and cooked with green chilis and onion, mix in some scrambled eggs, salsa, cheese, maybe some jalapeno slices, wrap in a tortilla and you have a fine breakfast burrito. Or chop them and make homemade fatty pizza. Use your imagination. Post anything new you come up with, with pics!
