going to bone out a chicken tomorrow, and looking for something really good to stuff that chicken with. ant suggestions.

that is what I did here, served on top of wild rice with a little home made pico de gayo on top.
 
I have been wanting to stuff a whole boned out bird forever. I already have a plan when I get ahold of one to do. I am going to make a pesto pasta with ricotta and fresh mozzarella and fill that puppy up with it.

When I debone my whole chickens, I usually stuff with spinach (wilted in bacon drippings), homemade bacon bits, chopped tomato, Italian herbs, and baby mozzarella balls. Rolled and tied nice and tight and smoke roasted to perfection every time! A little parmesan and spaghetti for a finish, of course.
