What to smoke this weekend?

Anyone have any ideas? I have smoked Boston butts, chicken breasts, fatties and burgers. I'd like to try something different this weekend.
 
Something I have wanted to try but havent yet is a small fattie made from skinless chicken breast, pounded thin,, then stuffed with cheese n mushrooms and wrapped in bacon.  Think it would be a nice lower calorie meal.  Would imagine the temps would be tough too get right but... would also be a nice change from normal smoke stuff.  Guess it wouldnt be a fattie, maybe a chickie ? :)

How about a chuckie? I did one a couple of weeks ago and it came out real good and was a nice change of pace.
 
That actually counts delicious!!!! I BBQ'd some pork spare ribs last weekend. I'm not crazy about them.....but I'd love to try some baby backs.
 
This is my Go-To for Bird in the Smoker or Grill...JJ

Families Favorite Brine

1/2C Kosher Salt

2T Paprika

2T Gran. Garlic

2T Gran. Onion

2T Dry Thyme

2T Black Pepper

1C Vinegar (Any)

1-11/2Gal Cold Water to cover Chix

1T Red Pepper Flake Optional

Mix well and Soak the Bird for 24 Hours.

Remove the Chix, rinse if desired and pat dry with paper towels.

Place in an open container in the refrigerator overnight or up to 24 hours for the Skin to dry.

This will give a crispier skin when Smokng or Roasting...

Bubba Chix Rub

1/2C Raw Sugar

2T Paprika (I use Smoked if I'm just Grilling)

1T Cayenne

1T Gran. Garlic

1T Gran. Onion

1tsp Black Pepper

1tsp Wht Pepper

1tsp Allspice

1tsp Bell's Poultry Seasoning (optional)

Mix well and rub on Oil or Butter coated Chicken.

Reduce Cayenne to 1teaspoon if less heat is desired.

Today (Saturday), I'm putting some spare ribs in my MES. I'm not doing that 3-2-1, method but simply gonna let that hog rib cook for 6 - 7 hours. I'm also goona do some salt potatoes with some steamed veggies on the side. Then I'm gonna enjoy them with a case of beer.

Tomorrow, I'm gonna do a spatchcock chicken/roaster. It's gonna be so dang good. I love the weekends
 
Thanks for the brine and rub recipe...I'll definitely be trying that. I'm ginna do some baby backs and a stuffed fattie tomorrow by the pool with a case of beer!!!! I love the weekends too....they're just too short!!!!
 
I am going to grill some Fajatas and have Pico de Gallo with some nice Serrano Chiles ,Queso and Creama. But Butt sounds good too:
