What to do with a 14Lb pork belly that won't fit...

Ok guys, it's me again.

I have this pork belly that is too large for my smoker. But I really am not sure what to do with it. I want to make a little bacon out of it, but not sure what to do with the rest. The burnt ends sound good, but are there other things to do with it?

You can treat it like a shoulder and make pulled pork. Or if the skin is still on, I like to make crispy roast pork. Or, cure and season it and make pancetta.
 
Agree SmokinVOLfan cut it. That is one of the things that happen if you have a 30" smoker even with ribs.

Roast a piece of it like you would a roast to 165 deg. Salt & pepper, when it's almost through, brush it several times with maple syrup to glaze it, slice up and serve with veggies of your choice

After an 8 hour smoke I sliced the Pork Belly fairly thin. It's very tender but just a touch dry. It"s going to make some great sandwiches!

Good ideas but I'm pretty simple I'd have cut it and made it all into cold smoked bacon cause I like good easy bacon :emoji_laughing:
 
I've got a lot of pork belly yet. Probably around 10 lbs.

When I get my mess cleaned up after last nights smoke, I'm going to lay out more of it for bacon.
