What IT Do You Cook CSRs To?

I put some on about 2 hours ago (MES40 set to 230° to cook and alarm temp at 148°).

From the ET-73 reading, I'm almost there.

At what IT do I call them done?

I do the 2-2-1 if they are bone in

Took them to 160° and they were perfect.
