A friend gave me a pack of meat. We thawed it and it is 2 pieces. Thought it was Picanha but the fat cap is thin and the grain doesn't look like it. It comes from Snake River Farms. Any ideas?
I think smokerjim is right about the piece on the right. The one on the left might be an untrimmed tri-tip.Hard to tell, looks like it might be untrimmed boneless beef short ribs.
Yes'sir, I think they're boneless Chuck Short Ribs.Hard to tell, looks like it might be untrimmed boneless beef short ribs.
I have seen a lot of tri-tip cut like that around here and I think that is correct.I think smokerjim is right about the piece on the right. The one on the left might be an untrimmed tri-tip.
Guys...What about Ribeye cap? Both pieces are the same cut.

The man says both pieces are the same cut, so it's not Boneless Chuck Short Rib AND Tri-tip, one or the other.
And it for sure looks to have been taken off the ribs, so....
Also, IIRC Chuck Short ribs have grain running two directions under the fat cap.
Yup---That first Pic seems to have the alternating Meat, Fat, Meat stripes like Ribs have.Yes'sir, I think they're boneless Chuck Short Ribs.
