What is everyone smoking this weekend?

I am in the smokin' mood big time this weekend. I have invited some good friends over for a feast.

This is the menu 3-9lb butts, 1-13lb brisket, 4-slabs of spares and 10lbs of chicken quarters, abt's, moink balls and of course Beer.

My goal is to have all the meat finish at the same time more or less.

I will be heading back home from vacation this weekend so no smoking for me.  This week though up in da nord woods I have smoked a turkey, pork butt, and today is smoked chicken lasagna.  Having to smoke on a fire pit/charcoal grill combo has been a bit of a challenge and it looks terrible, but the food has turned out wonderful.  I was going to take pictures but then thought I would be too embarrased.  Now after eating the food though I sure wish I would have to to show you dont need a to spend much to be able to make great Q.  My very first pork butt and it made the best pulled pork I have ever eaten.
 
I can't decide between a couple butts or try Jeff's salmon recipe from the newsletter.  One gets me a lot of meals for the week but its a lot of work, while the other is less work.  time will tell.
 
4 racks of spares and 4 fatties for me.

2 bacon, cheese and onion filled and 2 steak and cheese filled...

going to be a delicious saturday!
 
Not sure what the weekend holds but I had a first last night that turned out pretty well.  BBQ Chicken Pizza.  Smoked the chicken breasts, put bbq sauce (instead of pizza sauce) on homemade dough, then the chicken, topped with cheddar and then back in the smoker at about 300 degrees for 30 minutes.  Turned out pretty yummy and didn't take all day to make.
 
RP - What the heck time are we starting, good friend? haha  Sounds like a throw down at your place...I'll even pitch in on tending the fires.

Probably just pickup a couple racks of spares tomorrow after work.  I've been eyeballing brisket at the store a couple times this week but I'll probably just go with the ribs one day this weekend and take momma to the beach for a day to start celebrating her finishing up schooling and all.  For only a fleeing second I thought of going to the beach for the entire weekend, but I don't think I could go a weekend without smokin' something!  Finally gonna be a second paycheck back in the house after a 3 year absence! YAY... 
 
Got some ribs and a small brisket ready to go for today.  Even made some new sauce for the ribs.  Gonna throw on a dozen ears of corn for the kids (gotta eat your veggies!)

Smoking a micro 3.25" thick dry aged Prime rib roast (actually Prime grade, too!). Two racks of ribs tomorrow - probably pork-something Sunday.

We are making sausages, have 2 butts ready to grind up. Saw an interesting deal on DDD last Sunday making jalapeno sausages wrapped in corn husks, going to experiment with that. Of course wings.

I'm smoking about 24 lbs of butts for a small catering job I picked up from the wifes work. Then maybe some ribs for a friend who's saying I'm a good cook but she hasn't ate any of my smoked meat yet. Then she owns the saltwater fish store that I have been using for about 12 years now

I have 2 5 or 6 lb butts that I need to get cooked for my housewarming party next weekend (I have about 8 lbs of pork already pulled and in the freezer too).  Also have a full filet of salmon defrosting in the fridge as well.  Might try out the brining recipe in the newsletter.  I have 3 racks of baby backs to smoke for the party too but I think I'm going to smoke those the day of because I've never had a good experience with reheating ribs..
 
I am going to need to see pics of the deliciousness you speak of!!

I just burned off my new Traeger last night, The wife is off and actually excited about it! We were going to cook up some bacon on it for breakfast, but we kinda slept past breakfast.... But were gonna get a Papa Murphy's pizza for lunch and I rubbed down some chickens for beer can chicken for dinner. Have a full packer brisket I am gonna rub tonight for the morning and put it on about 5:30 before I go to work and one or 2 boston butts since I'll have the room on the smoker anyway!!
 
Firing up a 7lb brisket flat, 6 lb pork butt, and 2 slabs of baby backs. May snag some chicken and sausage too. :-)

I just received my A-MAZE-N smoker, so I might do up some cheese and almonds on its virgin run.  I'm not sure when I'll be able to get to my country ham...
 
Right now it's 9 racks a spares . Not sure what may sneak into the MES once i start.
