We have over 30 relatives coming over. Planning on smokin a couple of fatties as part of the apps on my ECB. I have an 11# prime rib that i will do on the weber on the rotisserrie and a 10 # pork loin that I will do on another weber with a rotisserrie. Also got 200 clams coming that I will grilllup for apps on my baby weber. Shes making a lasagna inside. Gonna be a busy day, hope it is cold enough for christmas but not too cold.
Staying here and doing some smoking. Got 2 chickens and 6.5 lbs of pork countrystyle ribs to cook up. Never done ribs before so hope they turn out. Also gonna do some pheasant hunting while the season is still open.
Country style ribs are usually the top part of the butt. You will probably be more satisfied with them if you treat them as a butt, but not ribs.
Just thought I would throw that out there since you mentioned that you have not done ribs........this aren't ribs really, but more of a marketing thing by the grocery stores.
Staying local. Just here and there for the grandparents then my parents and then her parents. All spread out over a week. I'll be doin Dutchs beans, and 3 fatty's tonight for a party here at work tomorrow. Also a Ham on christmas morning and i'm sure ham for the inlaws.
Christmas Eve we're having a family Tamale Feast with red pork tamales, red beef tamales, sweet raisin and Kalua tamales, and green chile and cheese tamales. Christmas Day just chillin'. Dec. 27th we start the final part of our move to the new digs. Luckily we're only moving 5 miles away. I may need a drink or 2 BEFORE New Year's Eve! Have yourself a wonderful and safe Christmas!
Looking forward to having christmas at home. Mike and Jane are spending the holiday with us and we just have to do some smoking. I see where many of you'all are smoking turkeys. Any tricks to share?
You ought to see what we get here for Country style or sometimes called Texas style ... it is the loin connected where the ribs and spine meet and butterflied so that there is spine at one end and a small portion of rib at the other. Sold as a slab or sliced into 2 inch strips. It is interesting in that you get a bit of rib, streaks of fat, and a lot of lean loin ... all in one piece!

I am going to Houston. I will be carrying jerky, dried sausage, slim jims, etc. for snacks. I am going to let someone else cook for a while. I am just going to set back and watch the ships come in and out of the ship channel with something cold in my hand.
I flew up to Pennsylvania on Wednesday to spend the holidays with my three daughters and their families, including my 5 grandchildren. Scotty didn't come with me. Too cold for him up here. I had forgotten how nasty the weather can get. Dreary, cold, rainy and windy today. I ran errands while my daughter worked. Gads! what a rat race this area is. I'm going to grab a blankie and curl up on the couch with my grandson, christopher (8).
Daughter is doing all the cooking and she is cooking ham.
