what is au jus

take a look at my au jus post from yesterday, we are try ing to create one as we go along!
 
Traditional Au Jus is meat drippings reduced to intensify their depth and flavor.

USA au jus is drippings messed with... usually wine, and other spices and herbs added to make it more complex and give it greater depth.
 
Au Jus is French for "With Juices" meaning the natural drippings from the meat. So if you say "I made some roast beef with au jus", you are actually saying "I made some roast beef with with juices"
