I read today that when you smoke ribs the pores of the meet will open initially, for a couple of hrs absorbing the smoke and then close so if you continue to smoke the ribs get an off taste
 
I think somebody is over thinking things.
1st, Pores are a skin thing. They don't go to the bone.
This is the thing about the Internet. Too many hair brained ideas getting credit as Gospel.

I did some 3,2,1 ribs and loved them.
3 hours of smoke, two wrapped in foil with my BBQ sauce, then one opened to finish the ribs.
So that right there is a 3 hour eggzample.
But alas, I'm the only one here who loves smoked meat.
That is, besides my little old friend in my avatar.

Never had that problem, besides what are you supposed to do if you have a stick burner. Your gonna get smoke the whole time!

An urban legend? As others have mentioned, this is patently untrue. Smoke those ribs (or anything else) until they're finished. Some folks wrap in foil after two or three hours, others leave the meat exposed to the smoke the entire time, either way works depending on preference. I will say that most of the smoke "flavoring" occurs during the first few hours of smoke, but additional exposure won't inflict an off-taste (assuming you're using a good hardwood for the cook).
 
Matters of taste are mostly opinion anyway. I like a lot of smoke on things, some people may like less. That doesn’t mean it’s an off taste. I say try cooking ribs or whatever with a few different methods and you decide how you like it the best.

Off-taste is tied to the smoker likely being way filthy I'd think. You can have it -to- smokey for some one, but thats still different then an off taste. An off taste to me would be 'Hey does this taste like the bottom of a campfire we pissed in to put out last night?'

When I was just a young'in that would have been a dangerous thing to do. Funny but dangerous.
