goin to smoking some bacon , what breed of hog makes the best bacon?
using berkshire's for hams , duroc for ribs and butts.

isn't the chester whites known for their leanness?
You obvously have a local butcher or farmers with the "breed' in their herds

Most commercial hogs today are not purebred, they are a mixture of breeds that are specially bred to produce a lean meaty carcass with a high feed to rate of gain conversion rate. I would guess that most are a 3 way terminal cross. IMHO the bacon will be great from any of these.

To my knowledge, Cowgirl is the pig expert on this forum, perhaps she will chime in somewhere.

which breed makes the best bacon, is it some with a lot of marbling between the tissue like the berkshire or some lean like the white crosses .

According to most farm web sites I googled, the Tamworth breed seems to be the choice for bacon. Here's a quote from Pig Paradise Farm.

i've only done feral & javelina(goat knows) either way they're both wild & depends on rain & forage & age of the pig as to what ya get. bacon(after beer) is my next project- thatnx for the info guys
